Tips and Tricks:
1. To make the pakoras crispy, make sure the batter is not too thick or too thin. It should have a dropping consistency.
2. You can add a pinch of baking soda or a little rice flour to the pakora batter to make them extra crispy.
3. Ensure the oil is hot enough before adding the pakoras. Drop a small amount of batter into the oil, and if it rises to the surface immediately, the oil is ready for frying.
4. While making the kadhi, make sure to whisk the yogurt and besan mixture well to avoid any lumps.
5. Adjust the consistency of the Kadhi by adding more or less water according to your preference.
6. Be patient while cooking the Kadhi. Let it simmer on low heat for at least 15-20 minutes to develop the flavors.
7. For tempering, you can use ghee instead of oil for added richness and flavor.

Now let's proceed with the recipe:
1. In a mixing bowl, combine the whisked yogurt, besan, turmeric powder, red chili powder, and salt. Mix well until you get a smooth batter. Add water gradually while whisking to avoid lumps. Set the mixture aside.
2. For making the pakoras, in another bowl, mix Besan, chopped onion, grated potato, green chilies, cumin seeds, asafoetida, red chili powder, and salt. Add water gradually to form a thick batter.
3. Heat oil in a deep frying pan or kadhai. Drop small portions of the pakora batter into the hot oil using a spoon or your fingers. Fry them on medium heat until they turn golden brown and crispy. Remove the pakoras from the oil and place them on a paper towel to drain excess oil. Set them aside.
4. In a separate deep pan or kadhai, heat oil. Add mustard seeds and cumin seeds. Allow them to crackle. Add dried red chilies, asafoetida, and curry leaves (if using). Stir for a few seconds.
5. Pour the prepared yogurt and besan mixture into the pan. Stir well to combine all the ingredients. Cook the kadhi on low heat, stirring occasionally to prevent sticking, for about 15-20 minutes or until it thickens slightly.
6. Add the fried pakoras to the kadhi and simmer for another 5 minutes. Adjust the consistency of the kadhi by adding water if needed. Taste and adjust the seasoning according to your preference.
7. Once the pakoda kadhi is ready, turn off the heat and garnish with freshly chopped coriander leaves.
