Palkova is a traditional dish made with milk and sugar. Since white sugar is one of the 5 whites to be avoided, I have modified the recipe by adding Palm jaggery or Karupatti. Getting used to Karupatti or jaggery can be challenging.
To ease the change over, I have added cocoa powder to this recipe. Chocolate and Palm jaggery go well together. Once the taste of Palm jaggery is liked by kids and elders, it is easier to make the healthier switch.
Palm jaggery is rich in iron and minerals. It is very low in Glycemic index. This is a healthy dessert rich in protein from milk, minerals and vitamins from plan jaggery. An ideal dessert recipe for kids and elders alike.
Ingredients and method:
* Boil 500ml or 1/2 litre milk. Add a few drops of lemon juice or curd. Sieve the curdled milk. Separate the paneer and whey.
* Take one piece Palm jaggery ( around 150 to 200 gms). Break it into small pieces. Add to a pan a long with a little water. Dissolve the jaggery and switch off. Strain the syrup. This is to eliminate sand or dust. Set aside.
* Take a thick bottom kadai or pan. Add the paneer and start cooking. Once it becomes dry add some more whey and keep cooking till all the whey is incorporated back.
* Once it is dry, add the palm jaggery syrup and bring to it a boil. ( The amount of Palm jaggery added can be adjusted according to ones sweet preference.)
* Add 1 or 2 tsp of cocoa powder and cook till everything comes together as a smooth mix. The amount of cocoa powder can be adjusted according to preference. If adding sweetened cocoa powder adjust quantity of Palm jaggery accordingly.
* Add a tsp of ghee for rich flavour and taste.( optional) Switch off.
* Chocolate vermicelli or chocolate chips can be added to garnish.
Chocolate Karupatti palgova is ready to enjoy.
