Whether you want a crispy, low-carb snack or a meatless version of fried fish, or even chicken these tasty bite sized cauliflower florets, makes a great snack or side dish. Lightly battered, crispy, and perfectly tender inside, this will be your new favourite way to eat cauliflower; your kids will love them!

Ingredients:
1 small cauliflower head or half
3 eggs
1/2 cup flour for dredging
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon thyme
1/2 vegetable cube
Vegetable oil for frying

Instructions:
Break the cauliflower florets into medium-small pieces. Boil them in salted water for 7-9 minutes, depending on how large your pieces are. Drain and set aside.
Add flour to a small bowl, season vegetable cube.
In a separate bowl, whisk the eggs with some salt, thyme and pepper.
Dredge the cauliflower pieces in flour and then dip them into the egg mixture.
Add vegetable oil to a large, non-stick skillet. Fry the cauliflower over medium heat for 3-4 minutes per side, until it turns golden brown on each side.
Enjoy on its own or drizzle with garlic sauce (recipe below) if desired.

Garlic Sauce Recipe:
Mix 1 tablespoon of minced garlic, 1 tablespoon chopped parsley, 1 tablespoon lemon juice, and 2 tablespoons of olive oil together.
Or you can enjoy with a delicious courgette/zucchini, tomato sautéés like we did.
