Dark sesame oil is a finishing oil and not a cooking oil. it has a low smoke point and the taste becomes very bitter when used for cooking.

Quick rule of thumb with sesame oil: light in color is good for cooking. Dark is toasted sesame oil, which is better for flavor and aroma at the end of the cook

Sesame oil is not an oil that is generally cooked. It’s usually used as a flavor additive oil usually added at the very end or close to the end of the cooking phase: it tends to lose almost all of its flavor when cooked, so for that reason this amount of sesame oil probably didn’t overpower the flavor of the tuna.

I prefer tuna with simple seasoning and maybe sesame at the end, too much stuff and you don’t taste that clean, fresh tuna. Also it’s not good to cook with that oil, it’s for flavour and tastes not great if you cook with it.

As a professional chef, I recommend you keep that tuna at the proper temp, under 38 degrees until ready to cook. Fish, especially cut fiah, have certain bacteria and viruses that can become deadly.

That sesame oil is already made from toasted sesame seeds so when you cook it it’s going to burn. Brown coloured sesame oil isn meant to be added after cooking and the yellow untoasted sesame oil is meant for frying/cooking with.

fun fact dark sesame oil is a garnish and light is for frying, you add dark to the end for the flavor and light for cooking cause dark will lose its flavor

Thats finishing oil my guy. Sesame oil comes in varieties, the transparent variety is for cooking as it has a higher flash point, the darker oil is roasted for flavor and used for finishing.
