Hi everyone 👋🏼 today I’m gonna share with you how I make Southeast Asia Pandan and Coconut rolls. This is very fragrant and the flavour of coconut and palm sugar is so good. I used my mixer to knead the dough this time but kneading by hands is possible too. It may take around 20 minutes by hands and if you have your KA or others you can also use that. Recipe
Pandan and Coconut Rolls
Ingredients:
Bread dough
260 g bread flour
40 g plain flour
200 g mashed potato
20g sugar
30g honey
1 tsp salt
1 egg
25g butter
80g milk
55g pandan juice (extract from 10 pandan leaves with 120g water, blended)
1 tsp instant yeast
Coconut filling
100g dried shredded coconut
120g coconut cream
40g palm sugar (raw sugar can be substituted.
40g raw sugar
Pinch of salt
150g coconut milk for topping before baking
Coconut glaze
1 tbsp coconut cream
1/2 c icing sugar
