INGREDIENTS: (for 4 servings)
500 g of ripe, firm tomatoes (3 large round tomatoes)
400 g of 1 or 2 day old bread, Tuscan or homemade type
(4-5 slices 1/2 inch thick)
1 medium red onion
1 cucumber
15 basil leaves
200-250 ml of water (approximately)
85 gr ml white wine vinegar (7 tbsp)
40 gr of extra virgin olive oil (3 tbsp)
salt
Ground black pepper
