Am Filipino, Never tried sisig with pork brain. I think many Filipinos do not like pigs brain. Never force your parents to eat them. I Love your parents. Greetings from Germany! God bless!

Actually, the pig's brain usually used to make it creamy just clean and cooked it thoroughly, the modern twist is now it was cooked with mayonnaise or egg to replace the pigs brain..

I usually marinate the beef into squeezed calamansi with soy sauce and chopped garlic for at least two hours. Then fry the beef and when soft pour the marinade then add the onions.

For me, I travelled around the world. While I enjoy the food of each country it offers, my palate always puts Filipino dishes on top of everything. My top 3 are: Sinigang na baboy, Adobong baboy or manok and Karekare. Nothing can beat them. Again, this is my taste buds.

Whenever I introduce someone to Filipino food, I prefer they taste thru my cooking. Hard to find just one resto that'll give justice to 4-5 dishes.

I'm glad you love Filipino food. Its quite underrated on the international level. Let me make a little correction, though. The original sisig by Aling Lucing's uses grilled chicken liver that was mashed into paste to make the sisig creamy. Maybe you've mistaken it with the Ilocano's dinakdakan, which is almost similar except for a few ingredients and the type of slice done and it uses boiled pig's brain.

Original sisig uses chicken liver. The one that uses pig's brain is called dinakdakan and it's much older than sisig, you could say sisig is a version of dinakdakan that uses soy.
