These small pastries made with puff pastry and parsley pesto are great as a snack or appetiser. They are not only easy and quick to make, but also tasty and healthy.
In this step by step baking tutorial we will also make parsley pesto with ingredients easily available in Spain: fresh parsley, ground almonds, hard cheese and olive oil.
Ingredients (the amounts can be varied depending on your taste and preferences) :
260 g / 9 oz puff pastry (I am using puff pastry without butter, but any puff pastry is fine)
1 medium size tomato (or cherry tomatoes)
125 g / 4.5 oz soft cheese like mozzarella
1 egg (for egg wash; optional)
Pesto:
20 g / 0.7 oz fresh parsley (frozen parsley is also fine as we will bake it)
25 g / 4 tbsp ground almonds
15 g / 1 tbsp shredded hard cheese (I am using parmesan cheese)
1 garlic clove
3 tbsp olive oil
½ tbsp lemon juice
¼ tsp salt
For best results, measure ingredients with a scale. All recipes are made with weighed ingredients using grams. Cup and oz measurements are provided for your convenience.
