Yeah but that's also way too much chocolate around the strawberry. The ratio of chocolate to strawberry is completely off and will mess up the texture

Thanks Melissa 🙂 My example of the chocolate bloom is an extreme example, it doesnt normally get that bad. A family member was very quick to snap up that chocolate subscribe plaque, i hardly even finished filming and it was gone😆

Haha I love and hate that bloom in equal amounts! On one hand I'm like oh lawd look at that poor chocolate! But the geologist in me thinks it looks like oolitic limestone as seen through a microscope. Bet no one else thought that 😅

@@ccastillo1973 im not a pro but i learned not to get them when theyre too ready best to get firmer strawberries so they dont get all soggy and bleed and best to make them same day or night before and put them in the fridge in a container i believe. Also from experience of an attempt before two coats of the wilton chocolate really prevent anything from oozing and a good coat of regular chocolate, i made mine thin and didnt realize until the next day when they were bleeding so yeah just a tip there

Made my first batch using 50/50 method and my chocolate came out thick. I used butterscotch Callebauts and white chocolate compounds as advised. I think maybe the butterscotch Callebauts was too thick not sure what happened the temperature was perfect.

Hey there Jamielee, can you confirm you used callebaut callets? If you did, I'd recommend increasing the callets to a ratio like 60:40. The cocoa butter in the couverture callets should help with your fluidity. Good luck 🙂

Hey there, i use roughly 1 part white vinegar with 4 parts water. soak for a few minutes then rinse with running water. There are many other ways of cleaning but this is a nice simple method 😉

I bought the same exact chocolate that you have , the flavor is great but I have a problem that they melt sooooo fast , if I use them at cake pops or the heart molds !! Please help me out

Hey there Hanan, are you doing 50/50 or couverture on its own? Either way, if making cake cake pops or molds the chocolate must be tempered well. If you dont want to worry about tempering just use compound chocolate on its own and it will set fine.

When you are the poster child for all the “DONT’S” 😩😅. I’ve shied away from chocolate dipped strawberries because of it. However, after “divine intervention” 😇 had this video pop up in my recommendations list, I have been a FAITHFUL follower & constantly in AWE ever since. I’ve been educated so much! Hi! I love your channel so much and had a couple of questions. After you dip the strawberries, how long do you put it in the fridge for before packaging it up? Last time I put mine in the fridge right after dipping (overnight) and they sweated a lot causing them to leak. It did not look very presentable. Also, after packaging the strawberries, can they stay out in room temp? Or do they have to go back in the fridge? I’m still learning and would love some feedback!😊

Hi Kimberly, In an ideal situation i would only have the berries chilling in the fridge for about 5 minutes prior to packing. If you have high humidity and storing them overnight, its going to be hard to prevent sweating in which case you might be better to carefully dab moisture off with paper towel prior to packing them. If your strawberries arent required for an extended period, definitely keep them in the fridge so they stay fresher for longer. Hope this helps 🙂

Love this video. My issues are always with white chocolate. I can never get it to the right consistency. I dipped cakesicles the other day and it started cracking up on me when it started to harden. I don't know what happened. Maybe you have some incite?

You can use Nutella if that's what you love. It will be difficult to work with and get a nice finish but it'll taste good! Otherwise i'd stick with using a chocolate that has good fluidity. Hersheys (again) would be a matter of preference.

Hi Kenza, without knowing what type of chocolate you are using (i assume it is a compound chocolate?) it sounds like you need to stir your chocolate more. Try that and let me know how it goes 🙂

Hey! Whenever I dip my berries in colored chocolate, after they dry I see tiny droplets of red strawberry juice on them isn’t that sweating ? I don’t know how to avoid this problem but I will in fact try these tips !

Hi miss Tye, one of my biggest challenges was delivering nearly 800 gift boxes to banks in 5 different states on the same day at 9am and we pulled it off. So yes, got a little experience with packaging to keep the berries safe and cool during transit. I'll be happy to share what i did, good idea 🙂
