This classic dish is leveled up by using roasted garlic and white wine.
Ingredients:
1 Head of Garlic
Salt and Pepper to taste
1/2 cup Olive Oil
3/4 cup Flat Leaf Parsley Leaves
1/2 cup of White Wine
1 lbs. Spaghetti
1/2 tsp. red-pepper flakesFreshly grated Parmesan
Directions:
1. Preheat your oven to 400 degrees.
2. Cur the entire top off of your head of garlic. The stem is tough to cut through and sometimes the garlic falls apart when you cut it. Thats okay just reassemble the best you can in in the tinfoil. Pour a tablespoon of olive oil over the top and salt it well. Wrap it up and put the garlic on the center rack of the oven and roast it for 40 minutes. After 40 minutes take the garlic out of the oven and squeeze the cloves onto a plate.
3. Now prepare the oil. Use a deep fry pan or a sauté pan. Heat the oil over medium heat. Sauté the garlic and break up the cloves using a wooden utensil. Add the hot pepper and stir it in well. Now turn off the fire and cover the pan. We’re going to let the flavors infuse while the pasta cooks.
4. Cook the pasta. When ready, put the drained pasta directly into the pan with the oil, reserving one cup of the pasta water. Stir well to coat the pasta.
5. Pour in half a cup of the water in and stir it well. If at any point the pasta gets dry add more of the water.
6. Salt and pepper to taste.
7. Put in one half cup of wine and raise the flame to cook it down a bit and burn off the alcohol.
8. Fold in the parsley and let it cook for another couple of minutes until the pasta is glistening but not too wet.
8. Plate into shallow bowls, sprinkle with the freshly grated parmesan and serve.
9. Enjoy!
