Gorgeous buttery tarts with a vanilla custard filling and a cinnamon touch, pasteis de nata are a Portuguese dessert you have to have
For this recipe I decided to make the dough for the tart crust from scratch, this is practically puff pastry so feel free to use puff pastry if you are running short on time but just make sure it is made with real butter ;)
The custard filling is an egg yolk base flavoured with cinnamon and vanilla
Can you hear that crunch at the end?? yum!

Custard filling
20g all-purpose flour
1/4 ts cinnamon
A pinch of salt
25 ml whole milk
3 egg yolks
125 ml milk
1/2 cinnamon stick
1/2 vanilla bean
85 ml water
120 g sugar
(Optional )1/2 ts vanilla extract
Dough (homemade puff pastry)
300 g all-purpose flour
1/4 tsp salt
210 ml water
180 g very soft unsalted butter
Bake at your highest temperature setting
270-290°C for 9-10min until the crust looks brown and the tops look slightly burned
Intro Notes: there are maaany ways to make these pastry treats of course as with any other dessert! (I am Not trying to piss off any Portuguese people here, that’s not what this should be about 😂)
I tried to focus on the simplest way of making the pastry which is the trickiest part and for the custard I wanted to do almost a one-bowl recipe
