It is fair to point out that the dish is not authentic, especially since Italia Squisita has done several excellent videos explaining how KZitem versions of various Italian dishes are not authentic. Consiglio per casa se avete un camino o un barbecue, utilizzate sempre della buona legna anziché il carbone poiché quest’ultimo è un po’ tossico. Fate andare la legna finché non diventa brace quasi “spenta” (si deve sbriciolare molto) a questo punto prendete la vostra carne condita è pronta per cuocere avvolta da carta da forno e protetta da stagnola. Sigillate bene bene la stagnola e posizionate la carne dentro la brace spenta. Assicuratevi che la brace stia sopra e sotto. Dopo 2-3 ore la carne sarà cotta perfettamente

ahaahaahaaha bellissima questa.....effettivamente è un bel problema riproporre il pastrami fatto in casa. la soluzione potrebbe essere usare un bbq esterno, ma in città come cavolo fai.

Needed to cure that longer as there was quite a bit of grey meat. Common problem when curing salts dont penetrate evenly throughout the meat. Best way to avoid is injecting curing liquid to promote even distribution or using a multi needle meat tenderizer to allow curing liquid to penetrate.

Well chef that does look good! Tutti bene. Your recipe is close to my family recipe, but we use our own beef, (dry aged animals at least 5 years old), and smoke it on Keawe wood. Smoked 8-12 hours. Traditionally. It cannot be improved. Then rest 24, Then we pressure cook it for two hours and rest 24 more hours. It’s sliced cold so that thin slices are possible, and reheated when assembly time comes around.

Ciao, credo che abbiate commesso un errore, nella cucina del pastrami, tipica ricetta della cucina rumena, la trimmatutara, (pulizia del grasso) non va eseguita come spiegato ma deve essere lasciato uno strato superficiale di circa un centimetro dello stesso che protegge e non fa seccare la carne durante il procedimento di cottura. Tale grasso va ricoperto con il Rub, che si non penetra direttamente nella carne ma che comunque la insaporisce.

In alternativa alla punta di petto puoi usare la copertina di spalla che rimane più morbida e succosa. Temperatura al cuore dai 65 ai 75 gradi. ( più alzi più secchi tenendo conto dello stesso arco di tempo) Buon divertimento e non pretendere d aver una mega esecuzione dopo 3-4 prove , come " qualcuno " pretenderebbe. Divertiti!

Spice shops online, but naming might be a bit different. In Holland it’s called nitrietzout. But you can replace it with regular salt. Just be warned: you will have to eat it immediately, you can’t save it for too long. You can also search for pink salt, its almost the same but ratios are different.

Italia Squisita is so wonderful about sharing the importance of cultural context for Italian cuisine, and has opened my eyes to the true carbonara and Amatriciana. But this is a really excessive example of not offering that same respect to other cuisines. And what is so frustrating is they there is SO MUCH to like here - the pastrami is beautiful and looks perfectly flavored, the pickles look great, and even the slaw substitute looks like the kind of acceptable elevation you’d expect from a Michelin starred chef trying their hand at a humble pastrami sandwich. But I’m sorry: mayo? Even an elevated mayo like he makes here, which indeed I’d love to try on a ham sandwich or some other application - on pastrami? It’s an infamita.

This is basically a gourmet re-interpretation of a Montreal-style Reuben sandwich. The original Reuben sandwich from NY was sliced corned beef, Swiss cheese, sauerkraut and Russian dressing (mayo, ketchup, horseradish, spices) or now more commonly thousand island dressing, usually served with a dill pickle. The Montreal version replaces the corned beef with "smoked meat", i.e. Montreal-style cured and smoked brisket (as far as I know, pastrami is usually navel rather than brisket, but pastrami experts, please forgive my ignorance). Here the chef uses smoked and cured brisket topped with cheese, fancy fennel sauerkraut, fancy tartar sauce (mayo, gherkins, spices) rather than thousand island dressing, and puts the pickle in the sandwich rather than on the side.
