Here is an easy and quick version of peach cobbler that is a treat all year long! Best served warm with a big scoop of vanilla ice cream on top, this comfort dessert is sure to please.
2 - 16oz bags of frozen peaches
3/4 cup sugar
1/2 cup water
1 stick unsalted butter
Crust:
1 cup self-rising flour
1 cup sugar
1 cup milk
In a large pot, combine frozen peaches, sugar and water. Cook over medium heat until peaches are completely thawed and warm and a syrup forms from the water and sugar. About 10-15 minutes.
Pre-heat oven to 350 degrees. While oven is heating, put a stick of butter in a 9x13 glass baking dish and put it in oven until the butter is completely melted and remove dish from oven.
In a large bowl, combine self-rising flour, sugar and milk and whisk together until smooth. This will make a thin batter.
Pour cooked peaches and syrup into the baking dish with butter. Then pour batter over peaches evenly. Place in oven and bake for 30-35 minutes or until top crust is golden brown.
Transfer from oven to cooling rack and allow to cool until cobbler is still warm. Serve in bowls with vanilla ice cream or heavy cream.
