Pretty sure those are nectarines though? Peaches have fuzzy skin and are very much *squelchy.* Nectarines have smooth skin and are similar to apples in the way that they *cronch.*

Even though I have a 2 year degree in horticulture and the simplest and 99% way most go by is the fuzz rule on peaches and nectarines. Nobody seems to know how to use google to confirm their guesses. I'm late and I'm not sure if anyone has done this yet, but I typed out written instructions for this recipe after I tried making these! It uses imperial measurements and is adjusted for using the smaller white peaches you find here in the US. Recipe below! Makes 7-8 cookies. Ingredients • 2 white peaches • A little less than 1/4 cup granulated sugar • A little over 3/4 cup water • 2.8 tablespoons unsalted butter, softened well • A little over 1/2 cup powdered sugar • 1 egg • 3/4 tsp vanilla extract • 1 tsp lemon juice • 1-1/2 tsp honey (or 1-3/4 tsp sugar) • 1-1/4 cups cake flour (or ap flour with 2-1/2 tbsp replaced with cornstarch and sifted together) • Red food coloring (and white if you have it) • Granulated sugar for coating • (Optional) mint leaves Instructions 1. Cut peaches into slices and remove pit. In a small saucepan, heat peaches over medium heat, then add the sugar and water and stir. Boil until sugar is dissolved, peaches are soft, and the syrup has turned pink, about 4-5 minutes. 2. Strain peach syrup into a container and let cool. Remove the skin from the peaches and blend them in a blender or food processor, making sure to leave some texture. Place the peach paste back into the saucepan and heat over medium heat, stirring with a spatula until the paste has thickened. Remove from heat and let cool completely. 3. Preheat oven to 350°F. 4. In a mixing bowl, beat the butter with a whisk, then add the powdered sugar and beat until fully incorporated. Add the egg, vanilla, and lemon juice and whisk until there are no clumps and everything is fully incorporated. 5. Sift flour into the mixture and use a spatula to incorporate the flour, mixing and folding until a dough forms with no clumps or streaks of flour. 6. Place parchment paper on a baking sheet. Using a kitchen scale, measure out 20g clumps of dough and roll them into balls, making sure not to leave creases as they will crack when baking. Place the dough balls onto the baking sheet and press very lightly on them to smooth out the tops and create a flat side on the bottom of each cookie. 7. Turn the oven temperature down to 338°F and bake the cookies for 15-20 minutes until the bottoms are lightly brown (mine took 18 minutes). Take them out if the tops start to brown. Let cool. 8. Using the tip of a small knife, carve out a little hole in the center of a cookie and then gently carve the hole larger until you have carved out the center of the cookie, making sure you save the crumbles. Repeat with all the cookies. 9. Take the crumbles and mix them into the peach paste. Add the honey (or sugar) and stir well, making sure to break any large pieces of cookie. Place the filling into a piping bag or ziploc bag and snip a corner of the bag. Pipe filling into each cookie. 10. Take two cookie halves and press/twist them together, using your finger to wipe any excess that squeezes out from the seam. Repeat with all the halves. Let sit for a couple minutes. 11. Take the peach syrup and stir in 3-4 drops of red food coloring, more for a darker pink and less for a very light pink. I didn't have white food coloring, but using just red worked fine. 12. Take each cookie, and holding them by the crease, dip each side into the syrup for 1-2 seconds. 13. Pour granulated sugar into a shallow bowl or plate. One at a time, place each cookie into the sugar and cover them with an even layer of sugar. 14. (Optional) If you have mint, take leaves and press the stem end into the crease of your cookies. I found it took using a toothpick to press them in so they wouldn't fall out. 15. Enjoy, and give credit and thanks to Cooking Tree!!

Oof I have to mute these videos most of the time because I cannot stand the slopping and squelching sounds when things are being stirred and whipped egg whites are being folded in. It grosses me out so much. And then in this one the person bit into and chewed one of the cookies right into the microphone! Absolutely not; I never want to hear someone chewing that loudly and clearly. I love the creations on this channel but I'm not down for the ASMR-like sound quality.

This peach cookie is Italian wedding cookie. I have had a chance to stay with Italian family and they had a family wedding at that moment. The mother baked this cookie and cooked ragu sauce which took three days total. Your posting reminds me of good memory of mine. Thanks!

For people asking, *yes* they are peaches. White peaches, which are sweeter than the traditional yellow peaches. They also are a little firmer, and have a bit of a crunch.

I am not sure how they do it, maybe by using superior controlled gardening techniques, but whatever it is, it makes them so sweet and the essence of the fruit is way more intense. I guess that is why they can get away with charging as much as 100.00 for a small package of fruits.

Asia,Europe and America have different species of peach, china/corea and Japan has white peach, if you are living in europe you can use Saturn peach, because they taste the same , or you can go to an Asian supermarket too.

Never seen a peach that colour... In Croatia these are often made for birthday parties, but the cookies are more cakelike, and the filling is chocolate, so it looks more like a peach core

I just finished making these! My cookies cracked a bit on top, but the syrup and sugar covered it up mostly. Mine were more orangey rather than pink, but still super cute and yummy!

I live in a southern country so the sound of that peach in the beginning made me cry! How come you have SUCH A HARD PEACHES?! 😱😱😱 Ours are so soft they just fall apart and the skin is peeling of by just a finger touch! I made this recipe! This was very fun and they were really cute and tasty :) (Some tips! I adjusted it to be vegan with Bob's Red Mill Egg Replacer and earth balance butter, and instead of the white/pink peach they use, I could only find yellow peach. When I boiled it with sugar and water, the syrup still turned a nice pink! But the sort of peach jam you make with it will be yellow. The cookies are a nice texture and subtle flavor. I would say that the shape you roll it in will stay when you bake it, so keep that in mind. With my batch, they weren't super crunchy on the outside or anything - I accidentally split and crushed a couple of them when I was cutting into the bottoms.)

Made these... omg IT WAS DELICIOUS! It turned out great! Definitely will make again and will try other fruits. My only problem with this recipe is that the temperature setting on the stove was off. Took my cookies soooo long to cook so I had to gradually increase to 260F. A tip: check your stove settings and adjust accordingly.
