Today, I made a cake using a pink peach that catches the eye with its beautiful color.
Where I live, pink peaches appear briefly in the middle of the hot summer and then disappear, so I can't miss this time.
I made syrup with peaches, made jelly, and ground the pulp to make peach mousse.
I made it with all my heart.
The pretty pink color cake was cut into an elegant curve and it was so lovely.

I made jewel jellies in 4 colors and filled the cake, and it turned out to be a fantastic peach cake.

* What about peaches?
As an alkaline food, it boosts immunity and stimulates appetite.
It is good for poor growth and night blindness of growing children, and it is effective for constipation by softening the intestines.

57 g sugar (1/4 cup + 2 tsp)
1/2 ea Lemon
10 ml ( 2 tsp) peach liqueur (can be substituted for white wine)

90g peach compote syrup (1/3 cup + 2tsp)
4g gelatin (4g powdered gelatin + 20g water)
● Pink Angel Cake
18g milk ( 1Tbsp+1tsp)
18g vegetable oil ( 1Tbsp + 1tsp)
1/4 tsp vanilla extract
85g cake flour (1/2 cup + 1Tbsp+1tsp)
1/2 tsp baking powder
6 egg whites (210g)
93 g sugar (1/3 cup + 1 Tbsp + 1 tsp)
10 g (2 tsp) lemon juice
Food coloring (Red)
● Peach Mousse
1 egg yolk
35 g sugar (2 Tbsp)
50g milk (3Tbsp+1tsp)
1/4 tsp vanilla extract
5g gelatin (powdered gelatin 5g + water 25g)
100g peach puree (1/3 cup + 1Tbsp + 1tsp)
100g Heavy Cream (1/3 cup + 1Tbsp + 1tsp) (60%-70% whipped)
● Jewel jelly for decoration
(Dark Pink)
80 g (1/3 cup) peach compote syrup
5g gelatin (5g powdered gelatin + 25g water)
(for clear, orange, light pink colors)
150 g hot water (1/2 cup + 2 Tbsp)
60g sugar (4Tbsp+2tsp)
10g lemon juice (2tsp)
10 g gelatin
