This soup is banging and is now a regular addition to our weekly menu. It’s tasty, it’s healthy & even the kids love it. I couldn’t recommend this soup enough!!

I've made this recipe a few times, it's simple but really good. My tips to make it even better.. I use 2/3 the amount of chorizo, and mince up some smoked streaky bacon for the remaining 1/3 I use Tesco soup mix, instead of just barley. The soup mix is mostly barley anyway, but also has some lentils, peas and other pulses to make it a bit less uniform texture Stir it every 10 minutes while the barley/pulses are simering. Occasionally a few grains sink to the bottom and start sticking/burning, not sure why this happens but id just does. Adding some sweetcorn or black eyed peas works well too, to be honest with the chorizo and mirepoix, you could probably add most things and it would still taste great. Finally instead of just adding salt to taste, I stir in some glutamates. Maybe a small teaspoon of red miso, or Worcestershire sauce, sometimes a pinch of MSG too.

Very delicious recipe. I made tonight with chorizo from a mexican market and only had brown rice but next time want barley because it is a little heartier. Thank you!

Good, but not affordable by any means. It cost me $5 in chorizo and $6 in kale. To be affordable I would use regular pork sausage and add some smoked paprika. For the greens: frozen spinach.

Austin man that’s expensive! In the uk chorizo is £2 which like $2.64 and kale is about the same price.

If you're used to eating canned soup it could be that you're used to fist fulls of salt. Try a few sprinkles of msg to enhance the notes of the other ingredients. If you want to, add a little cream, and one less can of tomatoes for the soup to take a turn in your desired direction.
