24: Aji Asta de Buey Rojo

-medium jalapeño heat
-Ripen to red (this is not ripe)
25: Aji Guyana
-Scoville rating: 1000-75,000? (I don’t believe this 😂)
-Guyana
-medium heat, VERY citrusy. Extra bright.
-ripen to yellow, thin and very long
26: Aji Amarillo (Aji Rojo)
-Scoville rating: 30,000-50,000
-Ancient Peru
-Cayenne level heat, fruity, complex
-used in classic Peruvian cooking (like ceviche)
-ripen to orange, very large pods!
27: Aji Colorado
-Scoville rating: 20,000-30,000
-Bolivia/Peru
-very very sweet, juicy peppers
medium jalapeno heat
-ripen to red, smaller than the other Aji types and faster to ripen
28: Aji Panca (Aji Brown)
-Scoville rating: 1000-1500
-Peru
-still sweet, but a richer flavor than other ajis
-used in sauces, seasonings, can be used in Mole
-ripen to dark blackish brown, extra large rectangular pods. They take a long time to ripen but they’re so worth it!
