Last time I made pasta, the ball wash good to make after 3 days in the fridge. And I have both wheat, durum wheat, egg and olive oil in the pastadough. The salt I add in the boiling water.

***** I would not leave an open cracked egg in the fridge for more than 1 day either. But the dough is enclosed in the plastic wrapping and do not let in any air. Like inside an egg...

I always throw in a dash of virgin olive oil and a few drops of water as well. And with that mixture I tend to use about 120 grams of 00 flour. Ok by you? You are lovely looking ladies by the way, makes it kind of hard to keep concentrating on the recipe ;-)

roll the dough, cut it, and leave it to hang for a few days so it dries out completely :)

Just mix it in a shallow bowl. So much easier especially for kids. Same result. 🤷🏻♀️

In southern Italy pasta is made without eggs, just woith a different type of flour. Egg pasta is made with 00 flour, while pasta the souther way is made with durum wheat flour.
