INGREDIENTS:
Crust:
12 whole graham crackers (honey graham crackers preferred)
1/3 cup packed light brown sugar
1 stick salted butter (melted)
Filling:
2 - 14oz cans sweetened condensed milk (not evap milk)
1 cup plain Greek yogurt (2% or whole)
1 Tbsp grated lime zest
3/4 cup of fresh lime juice (+/- 10 regular Persian limes)
Topping:
2 1/2 cups heavy whipping cream
2 1/2 Tbsp sugar-free vanilla pudding powder
1 Tbsp grated lime zest for garnish
Optional: Lime slices for garnish
***THE BIG QUESTION***
"Do I have to use Key Limes in my Key Lime Pie?"
The answer is a BIG "NO" and there are good reasons why (especially if you don't live in Florida & can't get "authentic Key Limes") you'll want to use regular "Persian" limes from your grocery store:
1 - They’re tiny and take a lot of work to juice.
Be prepared to squeeze 18 - 20 Key Limes for just one cup of juice vs 5 -6 regular (Persian) limes.
2 - They’re often hard to find
Here on the West Coast, most markets don’t stock them but they can be found in some Mexican grocery stores because MOST Key Limes ARE IMPORTED FROM Mexico, NOT Florida.
3 - They’re often super sour and/or bitter
Mexican “key limes” are not like the original, locally-grown, Florida Key Lime. They can easily overwhelm/ruin your pie because of their intense flavors.
4 - They’re expensive.
If you do find them, get ready for some sticker shock. They ain’t cheap and may cost 2 - 3 times as much as regular limes.
5 - They yield less juice per pound
Sometimes as much as 50% less than regular limes
As *Stella Parks puts it (in her article below): “So, not only are Key limes more expensive, you have to buy twice as many and work five times as hard to get the same amount of juice."
