Perfect Kunafa recipe without oven | Vermicelli Kunafa
Ingredients:
For sugar syrup:
Sugar-1/2 cup
Water -1/2 cup
Lemon juice -1 tsp
Rose water -1 tsp
For filling:
Milk -250ml
Corn flour-2 tbsp
Sugar-2 tbsp
Cream cheese- 1/2 cup
Vanilla essence -1/4 tsp
For base :
Vermicelli -350g
Butter -1/2 cup
Orange food colour -1 tsp
For garnishing :
Pista powder
Method :
1.Making the sugar syrup:
In a sauce pan add sugar , water and bring it to a boil . Then lower the flame and add lemon juice and rose water. Boil.
2. Making the creamy filling :
In a sauce pan add milk sugar corn flour and whisk nicely before putting it on heat as we not want any cornflour lumps. Then keep it on stove and stir continuously on low flame for 4-5 minutes till the mixture thickens.Add vanilla ,cream cheese and mix nicely (You can also use fresh cream or processed cheese instead of cream cheese as per availability.)
3.For the base :
Crush the roasted vermicelli with hand into small pieces .do not crush it to a powder .
Take melted butter add orange colour to it and add it to the vermicelli and mix well with hands
4.Assemble the kunafa by greasing a non stick pan with butter .Add half of the vermicelli and press with a bowl nicely to form the base .
Add the creamy filling over the vermicelli base and spread it evenly.
Add the remaining vermicelli mixture on top spread it evenly and press gently .
5.Cook the assembled Kunafa keeping the non stick pan over a hard bottom pan or tawa .Cook for 10minutes on low flame
6. Grease another non stick pan/tawa (stightly bigger in size than the first pan ) Flip on the tawa once cooked and again cooking on low flame for 6-8 minutes .
7. If you wish you use the oven to bake it , assemble the kunafa in the same way in an oven safe dish and bake at 180 degrees for 15-18 minutes.
8. Garnish the Kunafa with pistachios powder and enjoy the creamy delight.
