Masala Cookies/ Khara biscuit
-Are the most loved bakery snack by all .
These are very flavourful and mild spicy Cookies...Very easy to make and finished within no time...
Ingredients:
All purpose flour/Maida 125g ( 1 & 1/4 cup)
Butter 100 g
Baking powder 3/4 tsp
salt 1/2 tsp
Hing 1/2 tsp
Turmeric Powder 1/2 tsp
Powdered sugar 2 tbsp
Black sesame seeds 1 tbsp
Yogurt/ Curd 1 -2 tsp
Curryleaves 3-4 sprigs
Green chillies 3-4
Ginger 1 "
Crushed black pepper 2tsp
Method:
1. Sift flour, salt, baking powder, Turmeric powder, Hing together.
2. Soften the butter using fork.
3. Add sifted flour and rub with fingers to form crumbs..
4. Add finely chopped Green chillies, ginger and curryleaves. Also add crushed black pepper and black Sesame seeds.
5. Mix well. Now add 1 tsp of yogurt and combine to form a dough.. ( Do not knead the dough like how we do for chapathi)
6. Cover and refrigerate for 30 minutes.
7. After 30 minutes, add 2 tbsp of powdered sugar and combine.
8. Roll like a log and Slice into 1/2 " thick pieces and give round shape.. Press with fork to form design.
9. Place them on a lined baking tray and bake in an pregeated oven for 20 -25 minutes at 160° C. Baking time may vary according to your oven.
10. If You are doing on a stove top, then preheat a thick bottomed vessel, with a metal rack and lid for 10-15 minutes.
11. Place the shaped cookies on a steel plate ( no need to grease the plate) , and keep on a metal rack.
12. Cover with a towel and a lid.
13. Bake on low flame for around 30 minutes. Then open and check whether the bottom of the Cookies are brown or not...
If not then cover and keep for another 10 minutes and give a check until done.
14. Cool the Cookies completely.
Important Note:
Every oven is different...You have to set the temperature correctly...
Using "oven thermometer" is best for temperature rather than just setting the oven knobs..
