Preparation of the dough for the Soft Salted Croissants
The first step in creating soft savory croissants requires assembling the dough ingredients. Let's start by mixing the two flours in our food processor. Add the dehydrated brewer's yeast and then dissolve the sugar and honey (preferably acacia honey due to its neutral flavour) in a mixture of water and milk. We activate the food processor and, little by little, pour the contents of the jug.
Incorporation of lard and salt
The next step in preparing our savory soft croissants is to incorporate the lard and salt. We reduce the speed of our food processor and add a little lard at a time, letting the dough absorb it before adding more. Then pour the salt, alternating it with the lard. This phase helps to create a rich and very elastic dough, ideal for soft and savory croissants.
Processing and leavening of the dough
Once the dough is ready, we give it a ball shape, working it to make it a little taut. This operation, called pirlatura, will help our dough to push upwards during leavening. The dough is then transferred to an oiled bowl, covered with plastic wrap and left to rise for a couple of hours.
Spreading and Cooling of the Dough
After rising, turn the dough out onto a lightly oiled sheet of parchment paper and roll it out very coarsely. Then, we put it to cool in the refrigerator for an hour. This step is essential for the subsequent preparation of the soft savory croissants, because it facilitates the spreading of the dough.
Cutting and forming of croissants
Once the dough has cooled, cut the rectangles and make small incisions on the base of each triangle. We spread the base slightly and begin to roll up the dough to form the croissants. The formed croissants are then placed on a baking sheet and left to rise for another half hour.
Cooking Soft Salted Croissants
Before cooking, brush our croissants with a mixture of egg and milk or cream and sprinkle sesame seeds on top. Then, bake the croissants in the oven at 180 degrees (static) or 160 degrees (if ventilated) for about 20 minutes. The result will be beautiful and golden soft savory croissants.
Preparation of the mousse filling and assembly of the croissants
The last step in creating soft savory croissants involves preparing the filling. For our salami mousse, we combine salami crumbs, stracchino and liquid fresh cream in a kitchen cutter. The goal is to obtain a soft but consistent mousse. Finally, we cut the croissants like a book, fill them with the mousse, add a small piece of endive and a slice of salami. Our delicious soft savory croissants are now ready to be enjoyed!
