Persian stuffed chicken (Morghe Shekam Por)

North Iranian stuffed chicken is considered one of the elegant and ceremonial Iranian dishes. This dish, known as "Morgh-e Shekam Por” hails from the Gilan province and is prepared with tangy ingredients and fragrant herbs. In this recipe, aromatic greens, pomegranate paste, and walnuts are utilized. It takes approximately two and a half hours to cook this chicken in the oven. This dish is often served at special gatherings and can also be prepared using turkey instead of chicken.
Ingredients:
1 medium chicken
Brewed saffron (optional)
1 large onion
Salt, black pepper, turmeric and cinnamon (as desired)
Some saffron powder
5 cloves of garlic
1 tablespoon pomegranate paste
250 grams of walnuts
Aromatic vegetables: pennyroyal and blue thistle (1 tablespoon of each)
2 tablespoons pomegranate seeds
100 grams of butter
