Persian here 🙋🏽 We call it „shole zard“ which means „yellow squishy“ and it it‘s like rice pudding unlike this dish ❤

Ok. . . So it's kind a like, a rice pudding style dish. Which is something we have here in the states. Which has Rice, Milk / Evaporated Milk, Sugar / brown sugar, Butter / Ghee, Vanilla, Cinnamon, & Raisin's Some of the ingredient's listed. Are listed as alternative's depend on your personal taste.

It's always so fascinating to me how different cultures treat rice! They all have their own ways of making use of it and flavouring it!~ For me all the flavouring is done after the rice is boiled plainly!~

I grew up eating the western equivalent, here in Canada. Rice pudding. Rice, sugar, milk, and an egg. I like brown sugar, like your jaggery, but some people use white sugar. Also, we always added raisins. Instead of cardamom and saffron, we would add cinnamon and nutmeg. These dishes are more similar than different. I will try your recipe, with dates and almonds added, because those are my favourites. After I taste, I will post about it. I'm pretty sure I will like your version, too.

We have a dish here in the west that is very similar, rice pudding. It is made with rice, milk, eggs and sugar with raisins added. It is a custard with rice and raisins. The Spanish cook rice with orange peel milk and sugar as a breakfast.

Spain here, arroz con leche is a dessert, not breakfast. It's often served during Lent.

My dad made a Baked Rice pudding.Cooked rice,sugar,milk,salt,eggs,raisins and nutmeg or cinnamon.You mix it together and bake until it sets into a solid form that can be cut something like cake.It is also simply prepared in a pot and is soft and spoonable.

Is there a significance to adding the yellow color? Does it symbolize anything in this culture like good luck or health or something? I can imagine this dish being delicious without adding the color which is what made me think that the color may symbolize something.

We have rice pudding which is cooked rice in an egg custard. I have also known people who just put sugar and butter in cooked rice (rather than salt) and ate it that way, including for breakfast. Then there are also rice salads, a cold dish where raw vegies are diced small and mixed in cold white rice with seasoning to serve as a salad - that is more of a southern application. I have found poorer, rural people are more likely to eat rice with sugar as a sweet dessert, even if they eat rice as a savory dish. Regardless of our country we have similar applications for the same foods.
