Steak and Pepper Calzones
(Recipe for the Ninja Outdoor Oven, however can be adapted to a regular oven without the smoke flavour, or the Ninja Woodfire Grill).
Makes two calzones (and two portions of dough to save in the freezer)
Prep Time: 1 hour 25 minutes
Cook Time: 12-15 minutes
Total Time: 1 hour 40 minutes
Ingredients
Pizza Dough Ingredients
1 cup room temperature water
1 teaspoon sugar
1 teaspoon yeast
1/2 teaspoon salt
2 tbsp olive oil
3 cups of all purpose flour
1/2 cup of corn meal for the bottom of the calzones
Directions for pizza dough
Combine water, yeast, and sugar to a bowl and allow to sit for five minutes. Add the salt and olive oil, and then add two and a half cups of the flour and begin mixing the dough. Gradually add the remaining half cup of flour to the mixture. Knead the dough until it becomes a smooth ball. Cut the ball into four even pieces. Add two of the smooth balls of dough to floured tray, cover with Saran Wrap, then a cloth towel, and place in a warm spot. Use a sunny spot outdoors if you’re making this dough on a sunny day! After an hour, remove the dough balls from the tray, add them to a cornmeal lined tray, and begin flattening them out by pushing the dough with your fingers.
Once they are flattened out, you may begin adding your desired calzone ingredients. In this recipe, we used: leftover steak, three types of green peppers (bell, jalapeño, and curly sweet), slices of a mozzarella ball, cooked mushrooms, and marinara sauce.
Once the calzones are filled and sealed, brush the exterior with an egg wash (1 eggs whisked up with 1/2 tsp of cold water), then add the crunchy seedy topping (1 tbsp caraway seeds, 1 tbsp sesame seeds, 1/2 tbsp sea salt).
Set the Ninja to 425 degrees Fahrenheit, add the pizza stone, add pellets, press the woodfire function and allow the oven to preheat. Once the oven has been preheated, transfer the calzones to the pizza peel that has been lined with more corn meal. Gently place them on on the hot pizza stone and allow the calzones to cook for 12-15 minutes, or until golden brown. Enjoy!
