I do this for regular sloppy joe, too; dig out some of the bread. I then use it to thicken, instead of corn starch or flour. It makes it easier to hold all the mess, and keeps you from getting something you may have run out of. Great video! I also like a bit of heat to my Philly Cheese Steak, but I go banana or cherry peppers; instead of hot sauce. It keeps the pepper taste; without changing the basic profile, like hot sauce would.

I definitely would lightly brown the open side of the brioche in butter so the edges are a tiny bit crisp.

YESSSSS. It would definitely still be tasty without bell peppers, and we ate the leftovers over rice or as an open-faced sandwich with different bread, and both were really tasty as well!

As a huge fan of both sloppy joes and philly cheesesteaks I fully approve! But I bet having a slice of provolone on top in addition to being mixed in would be nice and help keep a shape :D
