❤️Pickled Daikon Strips Recipe - Fen & Lady First
💛 Main Ingredients:
White radish peel: 1 piece (sliced approximately 1 cm thick, then julienned)
Red radish shreds: For color, a small amount is sufficient
Cucumber: 1/3 piece, sliced into round cross-sections (optional)
Salt: 1 tablespoon (=1 gram) *Used only for water-removing
💛 Seasonings:
Vinegar: 1 tablespoon
Mirin: 0.5 tablespoon
Sugar: 0.5 tablespoon
Lemon juice: Squeezed from 1/4 piece
💛 Main Tools:
Large pot
Plastic wrap
Clean and sterilized hands or gloves for mixing ingredients
Sterilized knife, spoon, chopsticks, and glass bottles
Instructions:
1. Cleaning and Slicing: Cleanse fresh white radish peel, carrots, and cucumbers thoroughly. Use a new kitchen scrubber to scrub the white radish peel, then slice it into approximately 1 cm thickness before julienning. Julienne the carrots, and horizontally slice the cucumbers into round pieces. Place the sliced ingredients into a suitably sized bowl.
2. Water-removing: Add salt to the bowl and wait for about 1-3 hours, allowing the ingredients to release moisture, a process called "Water-removing." At this point, the excess moisture from the radish peel has softened it. Press out the water in the ingredients with your hands and discard it. The process of pressing out the water can be repeated 1-2 times.
3. Seasoning: Mix seasonings such as vinegar, mirin, sugar, and lemon thoroughly. After stirring evenly, cover with plastic wrap to prevent odors and place it in the refrigerator for marination, allowing the flavors to infuse.
4. Adjust and Bottle After 3 Days: After approximately three days of marination in the fridge, take out the radish peel from the refrigerator and taste it. If you feel a particular flavor needs enhancement, add more as desired. If the taste is satisfactory, transfer it into sterilized glass bottles, refrigerate, and store, enhancing the flavors. When serving, use utensils that have been thoroughly sterilized to prevent contamination, and this side dish can be stored in the refrigerator for about 3 months.
