This is one of my favorites. My family made these every year. So delicious and tasty. Thank you for sharing this as I know many people will love the delicious flavor of this dish. I eat it straight out of the jar in a salad or as a side.

We made it in eastern Kentucky. We called it mixed pickles, we just added shredded cabbage with it

Grandmommy made pickled beans and corn. She was from Alabama and died when i was young. Been searching for recipe and understanding of fermentation. Im excited to try this. 5 weeks to wait ?Ive waited 55 yrs I can wait 5 weeks❤️🤣

I am so glad that you found the recipe. I love all of my ferments at that level of 5 weeks or so. A lot of families ferment for 10 days. I have tried ferments at 10 days and it is just not as good as they are at 4-6 weeks. The time will be well spent on waiting. I can’t wait to hear how your pickled beans and corn turned out. Onions are great to ferment. I would not put a lot of them in the mixture as I would think they might overpower the beans and corn. A few would add a nice flavor to the ferment. What you could try is fermenting them on their own and adding them to the dish when you serve them. I love fermented onions in salads and pinto beans. So good as a side dish.
