I used to really love the Penrose Hot Sausages and the Penrose Polish Sausage but they burned down years ago I heard. Do you have a recipe close to that flavor. I’m definitely going to try your recipe thank you.

You never remove the casing from cooked sausage plus all cooked and smoked sausage contain instacure #1 to prevent bacterial spoilage. However, raw sausage like bratwurst must be refrigerated prior to use or cooking.

You really don’t need to sterilize the canning jars and lids because vinegar is glacial acidic acid that destroys bacteria

Everything looks really good but without cooking the sausages I wouldn't trust it I have to have my meat cooked but looks very delicious

Those sausages are already fully cooked. The vinegar will help to preserve them but I wouldn't leave them out for too long. Not knowing the pH of the brine after adding water plus the fat from the sausage may not be enough to make them shelf stable or unrefrigerated.
