Recipe:
110g or 1/2 cup Unsalted Melted and Cooled Butter
130g or 1 cup Light Brown Sugar
1 Egg
150g or 2/3 CupPlain Flour
1/2 tsp Salt
1/2 tsp Baking Powder
1/4 tsp Baking Soda/Sodium Bicarbonate
1 tsp Vanilla Extract or Vanilla Essence
150g or 2/3 cups Chocolate Chips
150g or 2/3 cups Roasted Walnuts (optional)
***If you do not want to refrigerate the cookie dough before baking then preheat the oven to 350 F or 176 C.
***Get an 8 inch or 10-inch pie tray. Cut a circle using either butter or non-flavoured oil, use maybe 1/4 tsp of oil, grease the tray and then put the parchment paper inside so that it sticks.
**Melt the butter and let it sit there to cool**
**Roast your Walnuts or nuts of your choice and set them aside to cool**
1. Beat the egg and sugar for at least 10 mins.
2. Add the melted butter and beat for 2 mins.
3. Add Vanilla Essence or Vanilla Extract and beat for another 2 mins.
4. Using a whisk, Add Flour, Salt, Baking Powder and Baking Soda (Sodium Bicarbonate) and whisk until all the ingredients have been incorporated.
5. Using a spatula or a wooden spoon, add chocolate chips and walnuts.
6. Transfer the dough to the pie tray, and use either a spoon or clean Hans to make sure that the dough covers the entire tray. You are now ready to bake or best results, cover the tray with plastic wrap and refrigerate for 1 hour to overnight. Once you are ready to bake simply preheat the oven to 350 F or 176 C and once ready, take out the tray from the fridge and stick it into the oven.
7. Cook the pie for 30 mins and DO NOT open the oven in between.
8. Once baked let the pie cookie cool for at least an hour.
9. Serve while warm with ice cream.
