Pate Brisee (Pie Dough) is a subspecies of shortcrust pastry. It has a light layered texture, which is why it is also called lazy puff pastry or quick puff pastry. In this video, we prepare a simple pie dough, a pie-crust base and 2 wine upside-down pies.

130 g cold butter
65 g ice water
a pinch of salt
a pinch of citric acid
