What temp did you ferment at? Love your videos. Whenever I watch one my 10 year old son is running around trying to imitate your accent the rest of the day.

Can´t remember but I usually start ferment at 18C with that one. Ive started at 20C also without any issues.

You can get almost the same result with us-05 except the ester that lageryeast will give you. Ex: 34/70 I brewed my christmasbeer last november with us-05. The taste of a christmasbeer is still there😃

I find them quite diffrent but it depends on the beer style of course.

One of my local breweries brewed a lager style wort with US-05 as an experiment and Called it "Darling Black Label" it was just as you described! Cheers

I might try brewing a lager recipe with the Us 05 yeast . It sounds really interesting. Would I ferment at 18 degrees?

Great video! I used a lot of US-05 for beers like this before I bought a chest freezer and temp control. I still love US-05 too, it is a great strain that almost never lets you down! Really enjoying the split batch videos! I look forward to Sunday every week to see what you have coming next Cheers!

I’d like to add that W34/70 retains lager characteristics, even when fermentation temps are in the low-mid 60s (16-17 degrees Celsius)

Hans! My homebrew Sensei! You talked about leaving beer on the yeast cake being fine. What about when dry hopping? Many places I read about this suggest any longer than 7 days and grassy flavours come through.

I have actually only got grassy notes from hops that hass grassy notes in the first place. Also have has some signs that old hops can give some more grassy notes but don't qoute me on that one. After dry cold crashing the hops drops to the bottom and the contact is very low.

Are you starting your fermentation at 35 psi from the beginning? If so have you noticed any changes in the way the yeast acts?

Hello. Why my Us05 beers always cloudy. (us04's with same recipe clear) Now it is in +4c in fridge about 2 weeks but cloudy. I used %98 pils, %2 wheat. I fermented at 16-18c for 2 weeks but your beers always like lager. How?(I bottle my beers)Thank you in advance.

Not sure, but the 04 is more flocculant than the 05. If clear beer is important use gelatine.

I love brewing with US-05. It's a very neutral yeast and always ferments clean. My local homebrew shop always includes it as an option in all their recipe kits for brewers that don't have a set up to brew a true lager.

Dr. I think I need a diagnosis. Since the pandemic, I've no longer had any interest in brewing or even drinking beers. I have ~40 gallons of beer in the house and don't know what to do with it. Much of my enjoyment in brewing was derived from competitions, and there are very few of those. I've switched to making carbonated mineral water clones which I can easily drink 5 gallons a week. I need a diagnosis and therapy for this problem.

You need something to dig into. Maybe try to brew non alcohol beers (below 0.5abv). That would keep you busy for a while.

@@DrHansBrewery That sounds like a challenge. I've also unsuccessfully tried hop-water but could never find the right balance for hops. I like your Rx. I might go back to hop water also. Keep up the great work.

@@DrHansBrewery I just e-mailed my son and said we have a new mission in life when he has free time (he is working on Master's in Math) - it only took him three years out of high school to get two bachelor degrees (Math and Stats). My two earlier attempts didn't work out to my expectations. I brought 3 gallons of water to 170F, did some type of water chemistry, and used either 2g of Lemon Drop per gallon or 3g of Simcoe for 10 minutes. I didn't chill them down rapidly (that might have been my problem). Put into a 3 gallon keg and carbonated. Both were somewhat too bitter. I need to find the correct balance of hops, time, or determine if chilling quickly is all that is needed. I've had one at my local homebrew shop - his was perfect and I was going on what he told me. I had it when it was something like 110F outside and it was the best refreshment when coming in out of the heat.

Just to clarify. That was either 2g of Lemon Drop per gallon or 3g of Simcoe per gallon. They were steeped in the 170F water for 10 minutes.
