It’s #TastyTuesday with smoky pinto bean tacos and a sweet peach salsa! This simple to make taco is bursting with flavor and very filling!
Ingredients:
Taco Filling:
1 15-ounce can pinto beans, rinsed and drained
1 medium tomato
1/2 red onion
4 cloves garlic
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
2 teaspoons soy sauce
Olive oil for sautéing
Peach Salsa:
Jared peach preserve or 1 peach
1 avocado
2 small tomatoes
1 teaspoon lime
Extras
Tortillas (used almond flour by Siete)
Shredded lettuce (used butterhead lettuce by Gotham Greens)
Vegan sour cream (brand used Forager)
Directions:
1. To make the salsa, chop the avocado, and tomatoes into small chunks and combine in a bowl with the peach preserves and lime juice.
2. Next heat the oil in a skillet then add onion, garlic and tomato. Cook until the onions become translucent, about five minutes.
3. Add the pinto beans, chili powder, cumin and paprika, and soy sauce. Mix well.
4. Add your sour cream, taco filling and lettuce to your tortilla and enjoy!
