The reason the umps left "early" can be found in the Official Baseball Rules, in OBR 7.01(g)(1): "The game ends when the visiting team completes its half of the ninth inning if the home team is ahead" and in OBR 8.01(a): "The umpires shall be responsible for the conduct of the game in accordance with these official rules and for maintaining discipline and order on the playing field during the game."
Because home team Pittsburgh was-you guessed it-leading 7-4 at the time of the 3rd out in the top of the 9th inning, the game was over at that time and the officials left the field in accordance with the rules.
When a game concludes and the teams want to continue playing anyway, the official sanctioned game turns into an unsanctioned scrimmage, which causes implications of liability for the officiating crew if they were to choose to continue their on-field service after the game has ended.
