PISTACHIO SABLÉ COOKIE RECIPE Note: This Sablé recipe is based on a cookie recipe that was originally published in Bon Appetit magazine. Multiple corrections and improvements have been made. MAKES: 55 cookies INGREDIENTS: -- Cookies -- 1 cup (2 sticks) Unsalted butter, cut into 1” pieces -- 2 large Fresh bay leaves (or 2-4 dried bay leaves) -- 1/3 cup Roasted pistachios, finely chopped -- 2 large Egg yolks -- 1/2 tsp Vanilla extract -- 1/4 tsp Rose water (optional) -- 3/4 cup Powdered sugar -- 1/2 tsp Kosher salt -- 1 1/2 cups All-purpose flour -- Icing -- Pinch of Salt -- 2 cups Powdered sugar -- 1 tsp Vanilla -- 1/4 tsp Rose water (optional) -- 6-8 tsp Milk (or water) -- 2 tbsp Pistachios, chopped roughly INSTRUCTIONS: COOKIES -- Place racks in upper and lower thirds of oven; preheat to 350°. -- Cook butter and bay leaves in a medium nonstick skillet over medium-low heat, swirling occasionally, until milk solids are a deep amber color and butter smells very nutty. -- Fish out and discard bay leaves. -- Pour butter into a medium bowl, scraping in any browned bits from the skillet (these are an essential part of this cookie’s character). -- Set bowl with hot butter over a large bowl filled with ice water; let cool, whisking often, until slightly cooler than room temperature (not until the butter hardens), 15-20 minutes. -- Transfer the cooled butter into a larger bowl. -- Using an electric mixer on medium-high speed, beat until light beige-colored and fluffy, about 3 minutes. -- Reduce mixer speed to medium-low; beat in egg yolks and vanilla (and rose water if using). -- Sift in the powdered sugar and continue mixing, scraping down sides of bowl as needed. -- Beat in pistachios and kosher salt. -- Sift flour in 2 additions. -- Beat until dough comes together. (It may look crumbly, but it should hold together then squeezed in your palm.) -- Transfer dough to a large piece of parchment paper and pat into a loose square. -- Cover with a second piece of parchment and roll out to a 9" square about 1/4" - 1/2” thick. -- Chill dough 20 minutes. -- Uncover dough. -- Cut into 1½"-wide strips, then turn the dough at a 45° angle and cut same-sized strips creating oblique diamonds. -- Small cookie cutters could be used instead. -- Arrange cookies on 2 parchment-lined baking sheets, spacing 1" apart. -- Bake, rotating baking sheets top to bottom and front to back halfway through, until edges are golden, 14-18 minutes. -- Let cool. ICING -- Whisk salt, powdered sugar, vanilla, milk or water (and rose water if using) in a small shallow bowl until thick and glossy [not runny, although it should drip off the whisk). -- Add more milk/water or powdered sugar if needed. -- Working one at a time, dip tops of cookies in glaze, letting excess drip back into bowl; flip the cookies and place back on pan. -- Sprinkle with pistachios before the icing has set. -- Let cookies rest 10 minutes to set for icing to set. NOTES -- Cookies can be made up to 3 days ahead. -- Store airtight at room temperature.

I made these, using a touch of orange blossom water instead of rose water in the icing. SO good. Glad I found this channel.
