I was lucky enough a few years ago to have Noah, the creator of PBC, set up next to me at a contest. I had the chicken, pork, ribs and brisket that he cooked that day. The chicken stood out as my favorite. The PBC is one heckuva chicken cooker! Great Video Jabin!

GQue BBQ Chicken is the only meat that the PBC shines in cooking. I’m not knocking the PBC but I do have enough experience with one to know That chickens are the PBC’s specialty.

Jamie I love all your PBC videos. I really appreciated your suggestion on how much charcoal to use. I thought a whole basket would be a waste. Used a overflowing Webber mini chimney unlit and a just under full chimney and everything turned out right.

That was my thought as well. That is similar to how I set it up most times now unless doing something longer. Glad you are enjoying the PBC videos. I have another hack that I am working on that will be a game changer if it works. Stay tuned for that!

Excellent cook, going to try this in my UDS sometime soon, been dying to my a video hanging chicken halves in the UDS to see if I can get it to work like the pit barrel. Great video

Which one did you like better, the coffee rubbed chicken, or the sweet & Spicy rubbed chicken? I haven't used a coffee rub on poultry before.

They both were really good, but I think If i was to pick one I would say the coffee rub... My kids would have said the sweeter one. a Coffee rub goes good with a lot of meats and is worth trying out for sure.

easyist way to cut a chicken is a quality pair of kitchen shears ...that seperate and are dishwasher safe

hey how do you make sure the skin isn't rubbery? Every time I cook chicken on the PBC I get rubbery skin instead of bite through

I will have to try that out. I haven't tested fully the temps for one rod out, only with both rods out which gave me a temp about 450. What temps have you come up with with only using one bar?

How do you measure the temperature in the barrel?

you don'y really need to as it cooks between 275-300. there is an opening at the bottom that controls airflow based on elevation though.. you set it and forget it. If you really want to see the temp just lower a leave in thermometer down one of the top openings.

It's there for sure.. in fact if you look at the thumbnail you can see it all over the cutting board and in the drip reservoir. cheers.
