Hey everyone! Today, I’m excited to share one of my favorite side dishes - Smoked Ranch Cornbread. This recipe combines the rustic charm of classic cornbread with the tangy, savory kick of ranch dressing, all enhanced by the subtle smokiness from a pellet smoker. It’s perfect for BBQs, family dinners, or any time you want a comforting, delicious treat.
Ingredients:
• 1 cup cornmeal
• 1 cup all-purpose flour
• 1 tablespoon baking powder
• 1/2 teaspoon baking soda
• 1 teaspoon salt
• 1/4 cup sugar (optional, for a sweeter cornbread)
• 1 cup buttermilk
• 1/2 cup milk
• 1/2 cup ranch dressing
• 2 large eggs
• 1/4 cup melted butter
• 1 cup shredded cheddar cheese (optional)
• 1/2 cup corn kernels (optional, fresh or frozen)
• 1-2 tablespoons chopped fresh chives or parsley (optional, for garnish)
Steps:
1. Preheat your pellet smoker to 350°F (175°C). If you have a cast-iron skillet, place it in the smoker to heat up.
2. In a large bowl, combine the cornmeal, flour, baking powder, baking soda, salt, and sugar.
3. In another bowl, whisk together the buttermilk, milk, ranch dressing, eggs, and melted butter.
4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
5. Fold in the shredded cheddar cheese and corn kernels, if using.
6. Carefully remove the hot skillet from the smoker and grease it with a bit of butter or oil. Pour the batter into the skillet and smooth the top.
7. Place the skillet back in the smoker and cook for about 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
8. Once baked, remove from the smoker and let it cool slightly before slicing. Garnish with chopped fresh chives or parsley, if desired.
9. Enjoy your smoked ranch-infused cornbread warm, with a dollop of butter on top if you like!
