It’s really nice that you tried to brew Grodziskie. But it should be crystal clear, bottle conditioned, heavily carbonated and just slightly smoked beer. The whole process is really important, not only the ingredients. Cheers!

I brewed a grodziskie earlier this year and absolutely fell in love. Smoky but very quaffable. Underrated style if you ask me.

I'm from Poland and I love Piwo Grodziskie. In addition to being smoky, it should also be clarified and highly carbonated. Traditionally, isinglass is used for clarification.

it is worth mentioning that the Grodzisk beer comes from Grodzisk Wielkopolski and has a different name due to the fact that the original name is reserved not by the Grodzisk brewery and they cannot use this name (this also applies to other breweries) as far as I know, the photo of this reservation is pending

Long time listener... first time caller... and I called to say... I think a rebrew is required! Do a quick google image search for Piwo Grodsiskie - you missed by a country mile. The commercial beer is much clearer, lighter in colour, highly carbed. The document you referenced that was produced by the Polish homebrewers who did all of the historical archive work... it's got all the clues on how to brew this beer successfully. Critically, highly mineralised water with good calcium levels and sulphate for flavour contribution... and the actual brewing process of a multistage mash for protein degradation... different saccharification steps...etc. etc. you can't ignore them as they have a profound effect on the end result. I know it probably goes against your production schedule and the way your running your own challenge to quickly repeat this but I think perhaps you could bookmark this style for a revisit when you're all done

There's a local brewery here in Tasmania who makes a great Piwo Grodziskie. I purchased a 4 pack and after the first can I wasn't sure what to make of it. After about 2 months I had another one and the smokey/savoury bacon flavour had mellowed out and it was dangerously good.

I love this beer style. Wish it was more well known outside of PL. If ones loves the taste of unique, smoked, light beers then Grodziskie is perfect.

I really like the vent hose idea. I've been taking the tri clamp off of the chilling coil, but of course that only helps during heating. I'll definitely give your method a go.

These videos really make my day!! Over time we've seen your brewery grow with new cool and advanced gadgets, and it's been awesome! But how about brewing one old school - kettle on a hot plate and plastic bucket? (Maybe a brewing starter kit?) To kind of ad perspective to all the cool equipment.

I like using my CIP ball on my CF5 as well, but I've found it tends not to get all the gunk under the lid if you've had a vigorous fermentation, or the stuff up in the cooling coil. Otherwise it does make the cleaning process a bit more hands off.

Piwo is beer in polish ;). It should be more carbonated[that's why it's nicknamed "Polish champagne"] and more clean[original recipe called for using Isinglass and used special mix of yeast].

Made this once with WLP001 and then made a double ipa right on the yeast cake. Both were delicious. I even let a Polish friend try it without telling him what it was. He knew what it was immediately and loved it! The double ipa was actually really good. Think hoppy with a hint of bacon.

Most polish ones have a smoke that i would describe as kiełbasa-like. It should be very heavily carbonated, its nickname back in Poland is "polish chamagne". Drunk from tall glasses.

Hmm nice to watch this as a Pole. However totally not my style... :) If you want to get Tomyski hops then I believe that thanks to company "PolishHops" they are available in the U.S. Some homebrewers mix Tomyski and Lubelski together in the same batch.

Traditionally we used Tomyski hops. Not do easy to get. Its ok to się pilsner malt (smoked) and wheat smoked 50/50.

When circulating, you should let the pump run on through ports on the fermenter; not just the bottom one. There's gunk that'll get stuck in the ports that the sprayball won't be able to get to

I've been getting ready to start home brewing after a few years away from it and this is one beer I'm really looking forward to brewing. I'm Polish and would love to try a historical Polish beer style, I'd love to send some to my brother and sisters as well. I doubt they would enjoy a smoked beer but they may enjoy the experience for the historical perspective. :D The information I've seen online refer to this as the Polish champagne of beers. It should be crystal clear and very highly carbonated, between 3 - 3.6 volumes of carbonation.

I wish I'd been here, I love smoked beers, Schlenkerla's rauchbier is one of my favourite beers, I'd have given it a much deeper critique because i would have probably drunk the lot! A brewery in the UK, Steam Machine, produced one made with birchwood smoked wheat malt that they smoked themselves and it was delicious. But maybe growing up in idyllic rural England and having regular bonfires, wood smoke infused stuff doesn't put me off...

how about a Braggot ale, half a mead half a ale. I did one where I substituted the water with apple cider. Made my house smell great for a few weeks. And it was one of these one and done beers due to the high ABV.

I've read that Grodziskie has varied from 100% barley malt to 100% wheat malt depending on when, who, and where. I've designed, but have yet to brew, a recipe that is 66% wheat malt (split between winter red and summer white) and 33% pear smoked barley malt. I know that traditionally it's 100% smoked malt, but tradition takes a back seat to my wallet and my taste buds.

... is there a bunch of lightning going on in there with the CIP? Caused by static charge...? is the table grounded? If anyone on YT could film the CIP in progress it would be you. Ships have a crude oil wash system similar to this, but they use crude to clean the crude sediments from the tanks, and have to use inert gas and other systems to keep from exploding as a result of the static charge lightning in the tanks from the nosels.

A local brewey by me brewed thus style a little while ago...it was good in small amounts.. as they stated in a flight was perfect since it broke up the styles I was having and did not over stay its welcome...very cool and different style

Grätzer is a real favourite of mine and I brew at least one per year. I first heard about it by way of Kris England. I love to take the bitterness up to 40ibu, but use Saaz for mine.

I used a similar ball for attaching to a sump pump to clean kegs. The setup all fits in a 5 gallon bucket.

How did you treat water chemistry? I am building this out in Brewfather and trying to get the water chemistry right... Just had a great Grodziskie from a West Coast brewery and I now want to brew one for home.

Do you find that this project has expanded your palate? Or is it mostly unchanged? Working in a brewery, my palate became way more open-minded, while my preferences remained. About the only two things I have trouble drinking are legitimately contaminated beers (not a pleasant brett or sour) and overly sweet beers. I even have a palate for unfinished beers, flat beer, and room temperature beer. In some cases/styles, I even prefer the uncarbonated, room temperature version.

Well, that's weird. Speaking as someone of Polish extraction - and a big fan of the brown, falling-down water - I thought that most Polish beer was 'unremarkable'. I'm willing to be educated. Sto lat! btw, not a bad stab at 'piwo grodziskie', for a Brit.

you also used German hops. Polish hops are used in Grodzisk. Why are you misleading people? If you brew a specific style, brew according to the recipe. Browar Grodzisk provides it on its website

Oud Bruin isn't anything like Altbier, not even remotely. It requires extensive aging time to develop the cherry pie in a hayloft smell and taste from the bugs.
