In the Quick Start video we discussed some of the functions of the buttons on your PizzaMaster oven and how to operate the oven in general. In this video we’ll talk specifically about how to burn off the manufacturing oils. You must complete this process the first time you turn on the oven, before you can bake in it.
If you refer to the third page of your Quick Start Guide, which was attached to your oven when it first arrived, you’ll see that it talks about what to do for “first time startup.” That’s what we’re going to walk through right now. Burn off takes about two hours, and then you’ll need about two hours for cool down, so you should plan to complete burn off with plenty of time to spare before you need to use your oven. Also, this will produce some smoke, so make sure the hood is turned on and the fan is running.
Once the oven is plugged into electricity, you will power the unit on using the main switch. Press and hold the plus button to get up to a temperature of 662 degrees fahrenheit. Next, turn the heat for the top and bottom heat zones up to maximum (10), and open the flues.
When the oven reaches about 450 degrees fahrenheit (after about 20-25 minutes) you’ll see smoke begin to accumulate in the chamber. When this happens, to expedite the process you can open the doors and fan out some of the smoke. Then close the door and let it go for another 45 min or so. As the temperature steadily rises to 662, you’ll see less and less smoke. Once the oven reaches 662, let it run for about an hour.
After the whole process is done, which will be about 2 hours in total, the oven is burned off and ready to go. However, the stones will be very hot so you won’t be able to bake pizza right away. Instead, open the doors and let the oven cool down for a couple of hours. Once it’s mostly cool, you can set the temperature you want for baking your specific style of pizza.
The stones have already been seasoned, so you won’t need to go through any type of curing process. The burn off process we’ve walked through in this video is all you have to do to prepare your oven before you use it to bake.
