My name was first. I had no time to think so I was honest. I chose Vanilla. She looked at me like I said I supported the extinction of the human race. Actually no, but actually actually yes. Or something like that. Let me explain. The point I'm trying to make is that, in contrast to most of the other flavor compounds, the main compound of vanilla extract, vanillin, _can_ be produced synthetically. The actual molecule, that is, not something close or tasting alike. It is the very same thing. In that sense, everyone knows what vanilla tastes like, because everyone tasted vanillin. That said, real vanilla of course consists of way more than just one flavor compound. Vanillin might be the dominant aroma, but there also is a multitude of minor compounds to it, "overtones" if you will. And those really do strike differently---if handled correctly. Because most of them easily break down when heated, leaving more or less just the vanillin.

Working at a steakhouse, we often get some really good commercial brand food items, especially for dessert. Except for unexpected shortages, we always have a brand called Chef's Line - more specifically, the vanilla bean flavor. To put into perspective how delicious it is, we once had a tourist from Italy who said she LOVES gelato. That bowl of "plain," untopped vanilla bean ice cream was - and I quote, "The best I have had so far in my entire tour of the western United States." Don't underestimate it.

Vanilla ice cream is also just severely underrated. Obviously if it's cheap ice cream it's not gonna be great and it won't taste all that strongly of vanilla. But when it's good ice cream, vanilla is hands down one of the best ice cream flavours that exists.

All I had to do was smell raw unadulterated vanilla beans. And everything vanilla scented and flavored became lies.. I've had homemade from scratch vanilla ice cream. And it was buttery and decadent. I've always been in love with the smell of vanilla. But when I smelled the actual bean... You will have a hard time finding anything that comes close to smelling like the original. It's hard to describe. It's very sweet but oddly DARK and sultry. It has depth to it that can't be described. It literally is black platinum.

The people who seek something "beyond vanilla" aren't in for anything greater than it. Their senses were dulled one way or the other, they don't recognise its subtle notes and need bolder, always different experiences to feel anything, their taste was soiled. Alternatively, these people were lied to and never experienced true vanilla, they thought it was bland and lame, and their sensations would be failed by vanilla without something to support it. Vanilla works in any shape, any texture, it can be warm or it can be cold, but It's never harsh.

Fun fact: vanilla affects the smell of what you cook, but it doesn't actually have a flavor. If you can't smell vanilla, you can't tell if it's present or not (unless you made homemade vanilla ice cream using vanilla extract, in which case you can taste the alcohol it's dissolved in) The reason why vanilla ice cream is considered plain, is because it's cold enough that the aromatics associated with vanilla can't start floating in the air freely enough for you to properly smell it, and because you can't smell it is has barely any flavor beyond ice cream with nothing in it
