Clear articulate and informative Steve. I'm just having a cup of coffee and half an hour watching my favourite You Tuber.. utter bliss. I have fourteen tubs of Jerusalem artichokes growing along the back of my garden. Can I store them the way you do with your potatoes in tubs?

Yes, they are best left in compost, they don't store well dug up. We harvest ours a week before we eat them : All the best - Steve

Nice one Steve. I do the tom sauce in the same way and I have let it rest to skim off the excess water before. The basic sauce method is a good way of doing it because if I need a finer sauce when cooking I just sieve it when I use it - no point making two mixes. Have a good weekend buddy

We found that the excess water was actually at the bottom rather than the top, how did you get it the other way around?

@@SteveRichards No idea Steve - maybe because it wasn't in the fridge, just left on the side for an hour. (Or heavier tomato flesh LOL)

Steve...Sauce. We fill a 4.5ltr pot with 50ml of olive oil, three large chopped onions, one whole garlic and fill pot with chopped tomatoes. We cut out the attachment section of tom but everything else goes in and simmer for 2 hours to evaporate water. A stick blender is used to blend a sauce. If the wooden spoon stands up on its own the sauce is thick enough. If not continue to simmer. Add oregano, basil, salt and pepper to taste. Freeze or Can USA style.....great sauce skins and seeds stay.

Hi Glyn, basically the same recipe but in reverse, but we add the extra ingredients later on to suit the need. In theory - we've not tried it yet - this way round has the benefit that the blended cold mix can sit in the fridge overnight to separate. The 'water' is ladled off and used for cooking, leaving only the paste, which needs a lot less time to reduce : All the best - Steve

Hi Steve! Interested in the bit about the new courgette plant. I have observed a couple of times a tiny version of the courgette plant growing off the main stem. It has never come to anything but this year my plant developed two new growing points as the main one became tired so I think is a way for the plant to regenerate itself rather than a new seed germinating. Never been able to find anything about it online though!

Thanks Steve. Brilliant as always. The thing I'd love to get an insight into is your meals and cooking given the amount and variety of fresh food you have available. The reason being, that you guys are largely self sufficient for veg and fruit so I always find myself wondering what you're cooking with all this great produce. Any chance we can persuade you to do some cooking vids, or at least show some recipes and photo's. Our growing is necessarily limited to a fraction of what you have going on, and it's great to be able to make salads with more than half the ingredients from the garden for a time, or to have our own home grown potatoes as part of our meal, or home grown kale in a stir fry etc, but for us it's always a small contribution to the meal. I'd love to see what's possible on your scale, especially given the health issues/motivation behind your growing. Cheers Steve! Thanks again. 👍

Thanks for the tomato sauce idea…good timing for me! I just watched your granola recipe and wondered why you do not toast your nuts a bit, maybe you feel it alters the nutritional value? I also use flax seed meal, and other seeds in a seed mix we get her on the U.S. West Coast. We are almond/walnut country, so those are always very fresh and lovely in granola. As a beekeeper, honey is my sweetener, but not too much and the iron in yours might be worth including.

Hi Gareth, we normally harvest weekly and it's hard to tell the difference between a box that's one day old and seven days old. We sometimes go to 8 days, but I've never eaten an older one than that. Thanks Kim, time and effort are always a big focus for me, in fact they are where I'm having the most intellectual gardening fun. I'm down to 10 hours a week now, to feed 14 people, which is not so bad. I go for no more than 3 hours of that being 'effort' a week, the rest being pure pleasure. That works out at about £70/hour : All the best - Steve

Talk to a carrot farmer, I bet they get straight carrots by sheer volume. Pick out the straight ones for the supermarket sales and the bent ones go to food processors. Also as a side note 4 out of 5 of my courgette plants have grown a side shoot thingo like yours. 3 different varieties, one being my favourite yellow ball! I see you dont grow those? I cut the side shoots off to save them the energy.

Hi Dean, it was a new little plant, not a side shoot, hard to see on the video. I do have two shoots on my yellow courgette, both kicking out 3 a week. I did think that re-carrots, as I said it, but too late and I don't edit. Carrots are so regularly sprayed and the soil do fluffed up, I really don't like the sound of commercial carrots anymore : All the best - Steve

Steve, tell me to shut up if not appropriate but have you found growing and eating your own organic veg has made a huge improvemet to your auto-immune issues? Of late I have been most interested and impressed by the story or Dr.Terry Wahls and started making more steps toward incorporating more of her Wahls Protocol....I thought, if she can almost cure he MS, surely that diet will cure anything.

Hi Steve, just a quick question, do you water Bath can your tomatoes? I have so many Roma, I’ve already made a year’s supply of sauce plus I’ve dried some and put them under oil and made concentrated purée. This year I also dried some and ground them into a powder. Tomorrow I’m going to make salsa with tomatoes, tomatillos and peppers.

@@SteveRichards Ah, that's something that I was wondering too; I watched the video twice! This year I've been skinning toms and pressing them into a poly bag lined box to make frozen 'bricks' when tipped out. I like the idea of letting the solids settle and pouring off the 'water' though, even if I still freeze the toms. Thanks for great videos Steve, I don't miss any now.

I am amazed your Marconi ha ve ripened already. I have two just turning. Here in Wales our light levels have been poor this summer, which is frustrating. So much rain and cool temperatures with bout of 'stupid hot'!!!

Same here with the spinach and chard Steve, also rocket and watercress have been hopeless. I am just taking to cutting quickly before all is lost and dehydratng them whizzing to a powder then storing in old Douwe Egbert jars. At least we can use for moothies, soups, stews and sauces.

We have plenty of spinach in the freezer, so it's not caused us any issues, but we are only a couple of weeks from abundance again, we've learned to be relaxed about it and have a little contingency in the freezer for key crops, like onions, winter squash, spinach etc

Those Aviditas tomatoes look and so und perfect, I wil l try them as well as the Honeycomb next year and give the Tumbling Tom and Gardeners Delight a rest. I like them as they have made good pata sauce for us. I hope the same goes for these varietie s new to me.

Excellent video. Thanks for the tomato sauce tip 👍 sadly my tomatoes have been a total disaster ☹ they are not ripping. Also have blight everywhere! Even in the crush varieties inside the polytunnel 🥺 worse tomato year ever.

We always buy fruit, including tomatoes, to eat fresh in Winter, we only manage self-sufficiency in veg, fruit is too good to go without or eat processed : All the best - Steve

We saw few cabbage butterflies until this month and are now finding caterillars. I haven't seen your greens covered the past few weeks so how come they look so good?

I keep an eye on them Lynn and squash any eggs that I see. I've also managed to spray once with Bacillus Thuringiensis. @@SteveRichards I'm starting to think of our 'three Brussels sprouts in one container' experiment as a butterfly decoy. They absolutely love it. I'm often having to fight off the butterflies whilst I'm squashing the eggs. I almost feel bad for them. Found a tiny caterpillar on there yesterday. Sometimes I use a cloth to wipe as well as squashing the eggs. Do you happen to know if the eggs can still survive if rather than being squashed they are merely dislodged and fall down into the soil? Maybe the eggs can hatch and the caterpillar can crawl up the stem in search of it's first meal? Have got the 'soft butterfly netting' in black from 'Gardening Naturally' on the cabbages and it's great. Also have it over an area where we interplanted some kales among leeks and beetroot. I've decided my top pet hate with gardening is ultra-fine mesh. Compared to that the butterfly netting hardly seems like it's there and so much easier to lift up to access plants. Still need to get some BT though.

I think that's the net I have and I like it too. I've never had an issue with squashed/dislodged eggs resulting is caterpillars eating my leaves that I know of.

@@SteveRichardsThanks Steve. I've now netted the container brassicas as well. It was getting silly how long I was spending on egg hunting duties. :-) I tried EasyNets first but their product listings made for a very confusing attempt to order, plus they never seem to reply to emails. Then I remembered Gardening Naturally. Only thing to watch out for with them is they have a separate web site devoted to netting sales and they have to update it manually, so it can show out of stock until they get a chance to update it. I've been very impressed with their service. One day I dropped them a note by e-mail a bit late in the day and they called me back to make sure I could get the order in in time that day, and added an extra item I'd forgot to put in the shopping cart. Brilliant!

My favourite is mushroom compost, but be sure to buy it composted and steam sterilised. I'm gradually transitioning over to my own home made compost and wood chips though : All the best - Steve

We don't really store them Corrine, because in winter and spring we use winter squash instead. In summer we grow enough for friends and family, but we don't have a glut. : All the best - Steve
