That's the way we do it over here Kurk we have this tool for cutting out the coins its a corner level that can turn at a 45degree angle and you get a tool wit it for notching out like an angle tool but smaller. Makes the job much more easy :-)

This is some stunning work. How do you form your corners? And I'm assuming you let the rendering go green before cutting? I've seen the quoin cutters om eBay, tempted to try it on a test wall!

Pretty much the same way I do it the key is setting up and getting it marked out and cut at the right time if can already work the tools it isn't to bad I enjoy doing these and straps abit of change of the normal straight forward walls

bin1127 not to dry or you'll not get a clean edge but not soaking wet either but it's better softer than to dry, like a lot in plastering it's about timing

anyone who is plastering years and cant do that is not a real plasterer. thats basic plastering here in ireland. very basic. they wouldnt look to sweet on a 2 story house. the only way to do quoins properly is with laths. you wouldnt get away with those kinda quoins here.
