I've been cooking chicken breasts in the oven for months for next days lunch, and they always get really dry and tasteless the next day. This method is now my new favorite way to cook chicken! Not only do they taste great, I could pretty much shred them with a spoon! Thanks for the vid! Subscribed.

I shredded the chicken, put it back in the broth with chopped celery and carrots. Added several small dumpling chunks, made of stiff bread dough; simmered another hour, all great.

@rumvodkaf1 Yes, you can use powdered chicken stock. Mix it with a suitable amount of water (as per packet directions) and use it as you would use liquid chicken stock :)

Simmering means you turn the temperature down low so the liquid is still slowly bubbling away ;)

I have to say Dave, I really like that you make all your stove top dishes on an electric range. As someone who also used electric burners, it can be frustrating trying to get the same results as someone who uses gas in their demonstrations. Keep up the good work!

VERY GOOD QUESTION Thompson223, i was gonna ask the same thing. Anyhow i am gonna try using water with lemon, pepper, a little salt and 1 cube of KNORR chicken flavor bouillon, instead of the stock, see how it comes out....got my fingers crossed

Twenty to thirty minutes? This resulted in the toughest chicken I've ever gnawed! I checked "Chicken Breasts" by Diane Rozas, Start boiling, eight minutes at the simmer, then cover and allow to cool in the liquid. Perfectly tender and juicy. No wonder the rest of the world smiles at Brit cooking. Dan

Actually, I've always believed that breasts are not chick at it's best; check our Adam Ragusea's youtube channel for what he has to say about thighs - you may convert. I made it just like this chef but I put in a couple splashes of hot sauce 😀 shredded it for a recipe with stuffing chicken casserole and then used the stock to make the stuffing😀😀😀😀

Great method, the other thing about it is that it is EXTREMELY healthy! Especially if you use chicken breasts. I think I only have reduced sodium chicken stock at home, should I adjust for salt?

@fezan84 I find even "low sodium" stock tends to be fairly salty anyway, so I wouldn't worry too much. Just have a taste of the stock before using it, if it seems salty enough - no problem. If you think it needs a little extra, add some to taste ;)

Hiya!! :-) I knew how to poach chicken like this, but I am SOOO glad that you posted this, because it inspired me to do what I have been wanting to for a while!!! and your video gave me the boost to do it. :-) I used 2 chicken breast instead of 1, added 2 extra cloves of minced garlic (I just got a garlic press - great decision, cos' I use garlic so often) a tbsp dried basil, some adobo w/pepper, & veg. stock instead of chk. let cool, then shredded chk. for chk. salad! used broth as soup mmm yum

No. Never wash chicken. Washing sprays germs all over your sink and surrounding area. Any germs that are on the chicken will be killed during the cooking process. (washing is terribly old fashioned from when people lived on farms and butchered the chicken themselves)

eating this as i write :) I would recommend if you have small (chicken)breasts, to not cut them in half. Also, I put in some extra garlic, and it tastes wonderful! I doubt I will ever leave this method of cooking chicken, thanks!

I agree! Very tempting. I've never seen that in my life , someone looks forward toma boiled chicken like - Captain Aty- a small Asian clawed otter who lives in Japan. Unbelievable even when he eats it with those little paws..😄 This is yummy yummy ymummy 🤗🤗🤗

I keep mine in for around 10 mins and when I cut through, they are already fully white. Is this ok or should I keep them in the broth for 20-30 mins like in the video?

Sorry, but your chicken is too dry and overcooked. I can see it from here. Turn heat on high...bring to a boil. Lower to simmer. Simmer for TEN minutes. Shut off heat. Put on lid. Let sit in water for another 10 minutes. I've been doing this for 25 years and it works everytime. MOIST and succulent.

@kegs666 Heavy-based saucepans allow the heat to distribute evenly while cooking. If you don't have a heavy-based saucepan, you can get a heat diffuser from supermarkets or kitchen shops (it like a round disk with a handle, the disk is filled with sieve-like wire) and place it under the pot while cooking. Failing that, just keep an eye on it during the boiling stage to make sure the chicken doesn't stick to the bottom and burn ;)

Ummm, dice it AFTER you're done poaching the breast, silly. LOL It will totally dry out if you dice it and poach it.

Add some linguini to cook in the stock, some butter and parmesan, stir 'til creamy , add a few halved cherry tomatoes, and the sliced chicken breasts, and serve with a nice salad.
