When I was in Peru I had the best Pollo a la Brasa at the restaurant Tori. The chicken had so much flavor I couldn't believe it. This week I'm attempting this amazing dish at home. Will I fail? Most likely I will come along for the ride as I attempt something I've never done before.

Make this recipe at home:
Chicken Marinade
8 Cloves of Garlic
2 Tablespoons of Cumin
1/2 Tablespoon of Black Pepper
2 Tablespoons of Salt
1 Sprig of Rosemary
1 Teaspoon of Oregano
1/3 Cup of Soy Sauce
1/4 Cup of Vinegar
2 Tablespoons of Aji Panca
1/4 Cup of Oil
1/2 Cup of Beer
1/2 Cup of Coca Cola
Let the Chicken marinate for 24 - 48 hours
Aji Pollero Sauce
1/2 Cup Aji Amarillo Sauce
1 Clove of Garlic
1 Egg
1 Tablespoons of Vinegar
1/2 Teaspoon of Mustard
Pinch of Cumin
Pinch of Oregano
Salt and Pepper to taste
1/2 Teaspoon of Huacatay
