I'm so grateful for your videos. You've saved me in orgo and now you're doing it again in Biochem. So many profs just read off of a powerpoint without expaining anything and though i read the textbook word for word thats too much info to remember. This is the first time you walked out to get a marker to for the first time write on the board. I had rewatch that section countless times just to be sure you did so. Lol perfect presentation, only take away was you kept repeating queit often.

In cellulose, u drew the beta all upward, because every carbon 6 molecules is upward it is suppose to be alternative, one up the other down ....

Yes you are correct. In order to form a 1,4-glycosidic bond between beta glucose molecules, one of the beta glucose molecules needs to be inverted. This means the "the carbon 6 molecule" will be down for that inverted beta glucose molecule.

Could somebody shortly point out to me why starch doesn't stack like cellulose? I mean, couldn't it?
The last comment about fiber makes no sense; fiber decreases the likelihood we'll ingest toxins?? As far as I'm concerned, eliminating fiber from my diet was the only way to resolve my horrible stomach aches, loose smelly stool, bloating and gas. I also eliminated all sugar and now I run on fat. I'm back to the weight I was in my late 20's and my joint pain is gone. This was a good lecture on sugar but don't try and make it seem like it's healthy for humans to eat. Go to "Low Carb Down Under" and see how diabetes can be resolved simply by eliminating sugar from the diet. Obesity has tripled since 1970 (along with coronary heart disease, cancer, diabetes and altzheimers) and getting us addicted to sugar in food is to blame (along with unsaturated fats and cooking oils).
