Man I made my first dry pork rub using cinnamon this last weekend it was amazing on the butt. Then I saved the my rib trimmings from past weeks and made pork stock out of those trimmings and then injected the butt with that stock.... dynomite .... love your videos brotha!

Fellow Vision grill owner here and that was a great cook sir. Our processes are slightly different but that is what I love about BBQing and why I watch different videos. I do want to ask though about your statement on coolers. A cooler will retain heat as well as cold so if you line the cooler with a towel, lay the foil wrapped butt in and cover with another towel(s) the cooler will keep it HOT and the butt will continue to cook while it rests. I pulled mine at 185 and it rose to 192 internal in the cooler. My target was 190 - 195 so I considered that perfect. After about 2 total hours in the cooler I was sitting at 170 so I then took it out and pulled it apart so no cold meat or reheating. Again, great cook and smoke on my friend...

Thanks Michael! That makes a lot of sense. I think I was getting confused around the ice chest discussions along with a few forums where I read about rapid cooling meat which seemed really strange. I may just try the foil and towel method in my mini chest soon. Thanks again for the comments and tips!

I'm not sure if you were serious about the cooler comment. You don't put the roast in a cold cooler. You wrap it in foil, put it in the cooler WITHOUT ice and it keeps the meat very very warm and lets the juices settle down. 2 hours is optimal.

Come on, it wasn’t that dry. 😂 Although I’d rate your comment in my top 10. Lol. In all honesty, it was my rookie mistake and I had never used a cooler to rest. Since that time, I’ve come to my senses, and my trusty towel and cooler are highly utilized during my smoking adventures.

Also, do you ever score you pork butt fat before smoking? Ive been using that technique for years but tbh im not sure it enhances it lol its just a habbit when prepping, curious of your thoughts?
