# Potato Fritters

Lightning-quick simple “Potato Fritters”.

In addition to its simplicity, the final result also tastes really good and addictive with such a nice soft texture.
Ingredients
* 250 grams Potato Starch.
* 750 to 850 ml hot water.
^^ The more the water, the softer the texture of the potatoes.
* 1 to 1 ½ teaspoon Salt, depending on the amount of water.
* ¼ teaspoon Ground Pepper.
* 1 teaspoon Powdered Broth.
* 2 tablespoons Fried garlic, mashed (4 fried garlic cloves, mashed).
* 2 tablespoons Fried Shallots (4 fried shallot, mashed).
* 3 stalks of Celery, finely sliced.
Ingredients for the Dipping
* 2 to 3 Eggs
* ¼ tsp Salt
// For the stringy-beard like version, the ingredients for the splash when fried are:
* 1 Egg.
* 30 ml of Water.
* Pinch of salt, mix well.
^^ Pour sufficiently when all the fritter balls are in the pan.
Note
This fritter has a soft texture. If you like it firmer, then you need to reduce the amount of water. Also skip away the water in the fritter dough. If you want to add eggs, reduce water as much as the eggs used. 1 egg is roughly equivalent to 60 ml.
For a firmer result, the Dipping can be replaced with full egg white, without the egg yolk.
