Who doesn't love Gnocchi, raise your hand... I love them, but the original ones with Potatoes!
It is a festive first course, delicious and healthy and also lighter than common pasta,
being composed of more potatoes than flour. I don't add the egg, I follow the homemade recipe
from my grandmother and they are truly excellent in both flavor and consistency, follow the recipe
and I will reveal all the secrets to obtaining the right consistency!
They can be seasoned in a thousand ways
but the classic is with sausage sauce, if we want to exaggerate the taste, we put them in the oven
with the addition of mozzarella, making them Sorrento Gnocchi!
Today I wanted to make them small like "Potato Chicche" and I seasoned them with a quick and tasty Amatriciana sauce!
🔴 TIP: The quantity of flour for making gnocchi is variable because it always depends on the consistency of the potatoes if they are more or less dry (I recommend yellow potatoes) so always add the flour little at a time! If you notice that the potatoes are watery, add an egg, otherwise they would require too much flour!
They must be prepared and cooked immediately or within a maximum of 30 minutes of preparation. If you want to make them first I recommend boiling them, draining them and seasoning them with a drizzle of oil and keeping them covered in the fridge, then you can bring them to the boil in the same water for 1 minute or skip them. directly in the pan with the chosen seasoning!

400 g Potatoes (weighed when cooked)
150-200 g 00 flour
For the seasoning:
500 ml peeled tomatoes or tomato pulp or fresh tomatoes
Guanciale (or bacon)
