Ingredients:
3 large leeks (white and light green parts only), cleaned and sliced
3-4 medium potatoes, peeled and diced (Yukon Gold or Russet work well)
4 cups vegetable or chicken broth
4 Tb heavy cream (optional)
4 tablespoons butter
Salt and pepper, thyme, garlic and onion powders to taste
Fresh chives, croutons or parsley for garnish (optional)
Instructions:
1. Sauté Leeks: In a large pot, melt the butter over medium heat. Add the sliced leeks and sauté until soft, about 5-7 minutes adding 2 tsp of each seasoning except black pepper(1tsp) halfway through the process.
2. Add Potatoes and saute for 5 minutes and then Broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 20 minutes.
3. Blend the Soup: Using an immersion or Ninja blender, blend the soup until smooth. Alternatively, you can transfer it to a blender in batches. Blending the soup is totally optional.
4. Add Cream: If using, stir in the heavy cream and heat through. Season with salt and pepper to taste.
5. Serve: Ladle the soup into bowls and garnish with croutons, chopped chives, or parsley, if desired.
