#realcomment When I was making pirozhki with potato filling, I found on the internet a tip to boil potatoes not just in salty water, but also to add a bay leaf, some peppercorns, and a couple stems of fresh parsley to the pot. It did not sound like much to me, but I tried it--and it significantly enhanced the flavor (in my opinion). Sharing this tip in case someone hasn't heard of it and would like to try.

i love these! my college days were spent in Russia, where we used to get these at the weekend рынок (market).... but fried пирожки were also available, and obv tastier.... as vegetarians, this was one of the few affordable food choices we had

Nothing wrong with carbs on carbs. When I was a kid and teenager I would take buttered bread and put my spaghetti with sauce on top of it and eat it like an open face sandwich. Chips with pizza are also good. Mashed potatoes also works well with macaroni and cheese lol. It should be noted I was a husky kid and have struggled with my weight for most of my life...but those carbs on carbs are delicious.

Vareneky (pierogies) and piroshki are very good comfort foods. My favorite filling for both is sauerkraut. Growing up, I did have vareneky (pierogies) and piroshki. They are like a blank canvas. So many fillings can be used. I have a mixed Slavic ancestry, including Ukrainian. I have relatives in Ukraine. I'm hoping things get better for everyone over there. Cheers! ✌️🙏🇺🇦

I only want potato!!! Why? Because that's my Ukey heritage. We just called them "baked peddaheh" - how my Baba said it (born in Lviv.) My mum made her famous paska only 2x a year. Looks mighty tasty!! Yum, yum!! My favorite is; ..Steamed diced cabbage/small amount of tiny diced onion, salt, black pepper and cooked ground beef mixture. I steep the diced cabbage/beef mixture in some beef broth. Fill the dough pocket with the cabbage/ground beef mixture and place a slice of pepper jack cheese on top before sealing and baking. Yum, yum!! Next time I might add some small diced cooked potato to the filling. ...Just got a Spiral stainless steel dough hook for my stand mixer. Love it. The C-hook is pretty much useless for kneading dough. So I pretty much kneaded all my dough by hand, which I don't mind. It is good to know how to do. Also did a fresh greasing of my stand mixer the other day. So my kneading by hand skills will deteriorate for awhile as I give the new dough hook and freshly greased stand mixer plenty of use.

this video reminds me of all the times me and my grandma would visit her sisters in their hometown; they always would make baked Piroshki with potatos and cabbage filling and some with apple and rhubarb fillings for desert. i was surprised that you actually added cheese in your potato fillings, this almost seems unorthodox yet intriguing 🧐

Ooooh this reminds me of something we have here called "pastelitos" mostly common in the mountains it's somewhat similar but the dough is fried and the filling is often time time just potato and cheese. At least that's the more popular one, other fillings include griund beef or black beans with rice (we call anything with that filling "Dominoes") These made my mouth watery tho, might try someday if I can find all ingredients :D

you can replace buttermilk with water. If you can't have butter, try miyokos vegan butter. That being said, I can't guarantee that the recipe will work with these substitutions.

Look delicious and a good potato mash is to die for with the right kind of potato. But I can already say now that these as good as they look, won't be for me. Carb with carbs inside, I cannot do it. Potato pizzas are a thing, but I keep those as thing as I can possibly make them when doing them.

I’m confused on the measurements. Do you weigh your liquids or use the measuring cup lines for grams? I weighed and it didn’t line up on the measuring cup. For example, 100g of cream was about 75g on the measuring cup.

All my liquids are weights, so you use the reading on the scale, not on the cup. The only reason I am using the measuring cup is because it has a spout and pours nicely. if your measuring cup has grams, it's a really screwed up measuring cup :) grams are weight and depending on what you put in that cup, the same line will produce different weight. Think features and rocks. Features are lighter than rocks. Flour is lighter than water, etc.

The dough will freeze fine. I don't know about the filling. I haven't tried freezing them. I promise that after 2 days in the fridge, they are all gone :)

You can serve them with tea as a snack or with some soup as a meal. They would go with absolutely any soup, but if you want to try a Russian soup, my favorite is borscht (I have a video on it :)

I’ve always wondered when people make mashed potatoes (or something similar), what is the point of salting the boil water? Most of that salt goes down the drain and you could just salt it while mashing. Still totally homogeneously seasoned and much less waste.

I heard adding corn starch to the board while rolling out the dough is a thing! The Chinese do it while making dough for dumplings and won ton wrappers and for spring rolls etc! What do you think?😇

Not at all. Pirozhki can be both baked and deep fried. Baked is easier. I like them both ways. For some fillings, deep fried is better (meat for example) and for some baked is better (potatoes), but that's just my personal preferences.

this is a rustic dish and perfect evenness isn't important. there is no one right way to do things. there are trade offs. the way I do it in this video is much easier than the radial cuts and thus more accessible to people who don't have great knife skills.

Be careful telling people to use kitchenaid more than speed 2. The instructions say to use it at maximum speed 2 for kneading dough. If your kitchenaid breaks, the warranty may be refused by the company because you did not follow the instructions, and Kitchenaid would have this video as proof of you not following the instructions.
